Chocolate Espresso Cake is a true magical experience! The little something that coffee does, is surely going to take you to a chocolaty heaven.   • For cake:

-256g (2 cups) all-purpose flour

-50g (0.5 cup) unsweetened cocoa powder

-115g semi-sweet chocolate

-300g (1.5 cups) Sunehra Mineral Brown Sugar by Trust

-226g (1 cup) unsalted softened butter

-4  large eggs

-180g (0.75 cup) buttermilk

-250ml freshly brewed espresso

-1 tsp vanilla extract

-1 tsp baking soda

-0.5 tsp salt

  • For ganache:

-180ml heavy cream

-170g semi-sweet chocolate

 

Get ready to jack up your chocolate cake with the kiss of coffee!

  • Melt the chocolate in a saucepan over a medium flame and set it aside to cool to room temperature. Preheat your oven to 350°F and keep your baking pans ready!
  • Take a small bowl and mix flour, cocoa, salt and baking soda in it. Take another large bowl and whisk brown sugar, espresso, butter, eggs and vanilla extract for about 3 minutes.   • Gradually add molten chocolate and continue whisking for another minute. Add the flour mixture to the batter and mix well by adding buttermilk at the end. Pour the batter into prepared pans and bake for 35-40 minutes. Cool it in the pan for an additional 10 minutes before inverting it onto wire racks for complete cooling.
  • For the chocolate ganache, keep the chopped chocolate in a bowl. Bring the cream to a low boil but be very careful not to spill it. Pour the hot cream over the chopped chocolate and let it sit for a few minutes. Whisk the ganache until smooth enough to be used for icing or pouring over the cake.
