Marshmallow meringue is everything a marshmallow lover wants. When toasted, it tastes just like marshmallows roasted over a campfire! Here's what you need to make your very own marshmallow meringue!
- 4 large egg whites
- 1tsp vanilla extract
- 0.5tsp cream of tartar
- 200g (1 cup) Premium Icing Sugar by Trust
Get ready with your kitchen torch!
- Take a heatproof bowl and add icing sugar, egg whites and cream of tartar to it. Put this bowl inside a saucepan containing 2 inches of shimmering water, in such a manner that the water doesn't touch the ingredients inside the bowl.
- Stir constantly for about 4 minutes until the mixture has thinned out. Premium Icing Sugar by Trust dissolves within seconds, just like magic! You can easily test by dipping your finger lightly and rubbing the mixture between your finger and thumb. You will feel no sugar granule as all have blended in. The mixture will tend to be thick but will thin out with time, and form froth on top. The temperature of the mixture should be around 71°C (160°F).
- Remove the bowl from heat and directly add the vanilla extract. Start whisking and continue for about 5 minutes until stiff glossy peaks form. Your meringue is ready! You can pipe or swirl it on your cakes and cupcakes or toast it with a kitchen torch for a delicious marshmallow topping.
